We worked with Grow Bristol, the city's pioneers in innovative urban farming, to create an in-house hydroponics system for growing ingredients such as Egyptian mint, pak choi, edible flowers, and mizuna (Japanese mustard leaves).
Holding around 140 plants over four levels, the hydroponics unit is a self-regulating system using no pesticides, and creates an optimum environment for good quality fast growing produce, just a metre from our chefs in the kitchen.
In our V-Farm hydroponic system we are of course growing only a fraction of what we use, but we believe in a sustainable and transparent food system and in promoting local food.
Featured in our V-Farm are:
Egyptian mint, Korean mint, wild strawberries, basil, spinach, pak choi, edible flowers & mizuna.
